Pan-roasted chicken inspired by the inimitable @ thedaleyplate’s chicken dinners. I used skin-on bone-in Giannone chicken, served them with sweet roasted garlic and plump asparagus cooked in chicken fat + pan juices. Salt + pepper at the table and lemon to brighten things up. Minimal ingredients with lots of flavor! __________________ Chicken: Take thighs out of the fridge, season both sides with a generous sprinkling of kosher salt, and bring them to room temp, about an hour or so. Meanwhile, roast the garlic. __________________ Roasted garlic: slice a bit off the top of a head of garlic (loose papery skin removed, but keep everything else unpeeled), place in a piece of foil, drizzle some olive oil all over, wrap it up and place on a baking dish. Roast on the middle rack at 350-375ºF for about 40min – 1 hour. Check around 45 min. to see if garlic cloves have softened. If they have, remove dish from the oven and keep warm. __________________ Increase oven temp to 450ºF. In a hot large cast-iron pan over med-high heat, add a small bit of oil and cook the chicken thighs skin side down for about 10-15 minutes or until the skin has a nice light golden color. The chicken should have rendered out some fat at this point. Carefully transfer the pan into the oven (still skin-side down!) And roast for 12-15 min. Remove pan from the oven, use tongs to flip the chicken so they’re now skin-side up. Carefully transfer the pan back into the oven and cook for another 5-10 minutes. Remove pan from the oven, transfer thighs to serving plates. Keep warm. __________________ Hopefully the thighs have given you a good amount of chicken fat + juices. Place the same pan on med-high heat on the stove – be careful, the cast-iron pan handle will be super hot! Use a folded dish towel or oven mitt to protect yourself! Cook a small bunch of asparagus (woody ends trimmed) for no more than 5 minutes, turning occasionally and cooking until asparagus has turned bright green. Remove from heat and divide between serving plates. __________________ Plate up the chicken with asparagus, divide the roasted garlic and serve immediately with lemon. Enjoy that salty CRUNCHY CHICKEN SKIN !!
